  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 can diced tomatoes
  • 1 cup heavy cream
  • salt to taste
  • pepper to taste

Instructions

  1. In the crockpot, add the chicken breasts, chicken broth, carrots, celery, onion, garlic, thyme, rosemary, and diced tomatoes.
  2. Cook on low for 6-8 hours or on high for 4-6 hours until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Serve hot and enjoy!

  • This soup can be frozen for up to 3 months.
