Crockpot Marry Me Chicken Soup

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup heavy cream
  • salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.
  2. Transfer the sautéed onion and garlic to the crockpot.
  3. Add chicken breasts, chicken broth, carrots, celery, thyme, and rosemary to the crockpot.
  4. Cook on low for 6-8 hours or until the chicken is tender.
  5. Remove the chicken, shred it, and return it to the soup.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Serve warm.

  • For extra flavor, add a splash of lemon juice before serving.
