Crockpot Stuffed Peppers

  • 4 bell peppers
  • 1 pound ground turkey
  • 4 ounces turkey bacon, chopped
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese
  • 1 cup chicken stock

Instructions

  1. Prepare the bell peppers by cutting off the tops and removing the seeds.
  2. In a bowl, mix together the ground turkey, chopped turkey bacon, cooked rice, diced tomatoes, and seasonings.
  3. Stuff the mixture into the prepared bell peppers.
  4. Place the stuffed peppers in the crockpot and pour the chicken stock over them.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. In the last 30 minutes of cooking, sprinkle shredded cheese on top of the peppers.
