  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 1 tablespoon red curry paste
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tablespoons lime juice
  • 2 cups spinach
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar

Instructions

  1. In a crockpot, add the chicken thighs, coconut milk, chicken broth, red curry paste, carrots, red bell pepper, onion, garlic, and ginger.
  2. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  3. Shred the chicken with two forks and return it to the soup.
