  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 1 pound boneless chicken thighs
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 2 cups mixed vegetables (like bell peppers and carrots)
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro, chopped
  • salt to taste

Instructions

  1. Heat the olive oil in a pan over medium heat. Add the onion, garlic, and ginger, sauté until fragrant.
  2. Transfer the mixture to the crockpot.
  3. Add the chicken broth, coconut milk, chicken thighs, red curry paste, and fish sauce.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add the mixed vegetables.
  6. Stir in lime juice and cilantro before serving.
  7. Season with salt to taste.

Notes

  • Adjust the spice level by increasing or decreasing the red curry paste.
  • For a vegetarian version, substitute chicken with tofu.
