- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 1 pound boneless chicken thighs
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 2 cups mixed vegetables (like bell peppers and carrots)
- 2 tablespoons lime juice
- 1/4 cup fresh cilantro, chopped
- salt to taste
- Heat the olive oil in a pan over medium heat. Add the onion, garlic, and ginger, sauté until fragrant.
- Transfer the mixture to the crockpot.
- Add the chicken broth, coconut milk, chicken thighs, red curry paste, and fish sauce.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the mixed vegetables.
- Stir in lime juice and cilantro before serving.
