Ingredients

  • 2 cups heavy cream
  • 1 cup dark chocolate, chopped
  • 3 large eggs, separated
  • 1/2 cup granulated sugar

Instructions

  1. In a heatproof bowl, melt the dark chocolate over simmering water, stirring until smooth.
  2. Remove from heat and let cool slightly. In another bowl, beat egg yolks and sugar until pale and creamy; stir in melted chocolate and vanilla.
  3. In a separate bowl, whip heavy cream until soft peaks form, then fold into chocolate mixture.
  4. In another bowl, beat egg whites with salt until stiff peaks form, then gently fold into the chocolate mixture.
