- 1 pound turkey bacon
- 1 cup diced onion
- 1 cup diced bell pepper
- 2 cups diced tomatoes
- 3 cups chicken broth
- 2 cups uncooked rice
- 1 tablespoon Cajun seasoning
- 1 cup sliced green onions
- 1 pound shrimp, peeled and deveined
- In a large crockpot, layer turkey bacon, onion, bell pepper, and tomatoes.
- Pour in the chicken broth and add the uncooked rice.
- Stir in Cajun seasoning and mix well.
- Cook on low for 6-8 hours or high for 3-4 hours.
