  • 4 cups chicken broth
  • 2 cups biscuits (pre-made or homemade)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, celery, and garlic. Sauté until vegetables are tender.
  3. Pour in chicken broth and add the chicken thighs, thyme, and black pepper.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Remove chicken, shred it, and return to the pot.
  6. Cut biscuits into quarters and add to the pot.
  7. Cook for another 15 minutes, until biscuits are cooked through and fluffy.
  8. Serve hot, garnished with parsley if desired.
