Easy Creamy Lasagna Soup

A rich and comforting lasagna soup made with creamy broth and turkey bacon.

  • 8 ounces lasagna noodles
  • 1 pound turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 15 ounces crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove bacon, crumble, and set aside.
  3. In the same pot, add diced onion and garlic. Sauté until fragrant and softened.
  4. Pour in chicken broth and crushed tomatoes. Stir in basil, oregano, and Italian seasoning. Bring to a simmer.
  5. Add cooked noodles, heavy cream, ricotta cheese, and crumbled bacon. Stir until heated through and creamy.
  6. Remove from heat and stir in mozzarella and Parmesan cheese until melted. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional cheese if desired.

Notes

  • For a vegetarian version, substitute turkey bacon with mushrooms.
  • Try adding spinach or kale for extra greens.
