- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup unsalted butter, chilled and diced
- 6 to 8 tablespoons ice water
- 1 cup fruit preserves or jam
- 1 egg, beaten (for egg wash)
- 1 cup powdered sugar (for icing)
- 2 tablespoons milk (for icing)
- 1 teaspoon vanilla extract (for icing)
- In a large bowl, combine flour, salt, and sugar.
- Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Stir in ice water, one tablespoon at a time, until the dough comes together.
- Divide the dough into two balls, wrap in plastic wrap, and refrigerate for 30 minutes.
- Roll out one ball of dough on a floured surface and cut into rectangles.
- Place a tablespoon of fruit preserves in the center of half of the rectangles.
- Top with remaining rectangles and seal the edges with a fork.
- Brush the tops with beaten egg and cut small slits for steam to escape.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until golden brown.
- Mix powdered sugar, milk, and vanilla to create icing and drizzle over cooled pop tarts.
