Easy Stuffed Pepper Soup

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 2 cups bell peppers, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup rice, uncooked
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sautéing until they are soft.
  3. Stir in the ground turkey, cooking until browned.
  4. Add the chopped bell peppers, diced tomatoes, chicken broth, and Italian seasoning.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in the uncooked rice and cook until the rice is tender.
  7. Season with salt and black pepper to taste before serving.
