  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups cooked chicken, shredded
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1/4 cup chopped cilantro (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and cook until translucent.
  2. Add minced garlic and sauté for an additional minute.
  3. Stir in the enchilada sauce and chicken broth, then bring to a simmer.
  4. Add the black beans, corn, and cooked chicken, followed by cumin, chili powder, salt, and pepper.
  5. Simmer for about 20 minutes, stirring occasionally.
  6. Serve hot with shredded cheese and cilantro on top.

Notes

  • For a vegetarian version, substitute chicken broth with vegetable broth and omit the chicken.
  • You can add diced tomatoes for a chunkier texture.
