- 1 cup diced onions
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups cooked chicken, shredded
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1/4 cup chopped cilantro (for garnish)
- In a large pot, heat olive oil over medium heat. Add diced onions and cook until translucent.
- Add minced garlic and sauté for an additional minute.
- Stir in the enchilada sauce and chicken broth, then bring to a simmer.
- Add the black beans, corn, and cooked chicken, followed by cumin, chili powder, salt, and pepper.
- Simmer for about 20 minutes, stirring occasionally.

- For a vegetarian version, substitute chicken broth with vegetable broth and omit the chicken.
