Florida Orange Juice Pumpkin Bread with Streusel and Orange Glaze

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1/2 cup chopped walnuts
  • 1/2 cup streusel topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree and sugar until well combined.
  3. Add the eggs and vegetable oil, mixing thoroughly.
  4. Stir in the Florida orange juice.
  5. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the walnuts and pour the batter into a greased loaf pan.
  8. Top with streusel topping.
  9. Bake for 60 minutes or until a toothpick comes out clean.
  10. Let cool before glazing.

Notes

  • For a sweeter glaze, add more powdered sugar to the orange glaze.
  • Try adding chocolate chips for a different flavor twist.
