2 cups cheese tortellini
1 pound flank steak
4 cloves garlic, minced
1/2 cup parmesan cheese, grated
2 tablespoons olive oil
2 cups spinach
Salt to taste
Black pepper to taste
Instructions
Cook the tortellini according to package instructions. Drain and set aside.
Season the flank steak with salt and pepper. In a skillet, heat olive oil over medium-high heat and cook the steak for about 5-6 minutes on each side, or until desired doneness.
Remove the steak from the skillet and let it rest for a few minutes before slicing it into thin strips.
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
Add the spinach to the skillet and cook until wilted.
Add the cooked tortellini and sliced steak to the skillet, tossing to combine.
Sprinkle with parmesan cheese and serve warm.
Notes
This dish can be made with leftover steak for a quicker meal.
Feel free to add other vegetables like mushrooms or bell peppers.
