Greek Chicken Meatballs with Lemon Orzo

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, oregano, salt, and pepper. Mix until well blended.
  2. Form the mixture into meatballs and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides.
  4. In a separate pot, bring chicken broth to a boil and add orzo. Cook according to package instructions.
  5. Once orzo is cooked, stir in lemon zest and juice.
  6. Serve meatballs over a bed of lemon orzo and garnish with parsley.

Notes

  • For extra flavor, marinate meatballs in herb-infused oil before cooking.
  • Serve with a side salad for a complete meal.
