- 3 ripe bananas
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup macadamia nuts, chopped
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the butter, sugar, and brown sugar.
- Beat in the eggs and vanilla extract until well combined.
- In another bowl, mash the bananas and then stir in the crushed pineapple, shredded coconut, and chopped macadamia nuts.
- Combine the wet and dry ingredients, mixing until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
- Let cool before slicing.
Notes
- For extra coconut flavor, use coconut oil instead of butter.
