  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup macadamia nuts, chopped
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter, sugar, and brown sugar.
  3. Beat in the eggs and vanilla extract until well combined.
  4. In another bowl, mash the bananas and then stir in the crushed pineapple, shredded coconut, and chopped macadamia nuts.
  5. Combine the wet and dry ingredients, mixing until just combined.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool before slicing.

Notes

  • For extra coconut flavor, use coconut oil instead of butter.
  • Ensure bananas are very ripe for the best sweetness.
