- 3 ripe bananas
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup macadamia nuts, chopped
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- Preheat the oven to 350°F (175°C).
- In a large bowl, mash the bananas until smooth.
- Add the crushed pineapple, shredded coconut, chopped macadamia nuts, sugar, brown sugar, melted butter, eggs, and vanilla extract. Mix until well combined.
- In another bowl, combine baking soda, salt, and flour.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For a sweeter bread, use more sugar.
- Feel free to add chocolate chips for an extra treat.
