Hawaiian Banana Bread with Pineapple, Coconut & Macadamia Nuts

  • 3 ripe bananas
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup macadamia nuts, chopped
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the bananas until smooth.
  3. Add the crushed pineapple, shredded coconut, chopped macadamia nuts, sugar, brown sugar, melted butter, eggs, and vanilla extract. Mix until well combined.
  4. In another bowl, combine baking soda, salt, and flour.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a sweeter bread, use more sugar.
  • Feel free to add chocolate chips for an extra treat.
