Healthy Chicken Parmesan with Vegetables

Enjoy a healthier twist on classic Chicken Parmesan with added nutrients from vibrant vegetables.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. In a pan, heat olive oil over medium heat and sauté garlic, zucchini, and bell pepper until tender.
  4. Coat each chicken breast with breadcrumbs, place in a baking dish, and top with marinara sauce and mozzarella cheese.
  5. Add sautéed vegetables on top of the chicken.
  6. Bake for 25-30 minutes or until chicken is cooked through and cheese is bubbly.

Notes

  • For extra flavor, marinate the chicken in your favorite herbs before cooking.
