Hearty Lasagna Soup

A warm and comforting soup that combines the flavors of lasagna with a hearty twist.

  • 1 tablespoon olive oil
  • 1 pound turkey bacon, chopped
  • 1 pound chicken ham, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 6 cups chicken broth
  • 2 tablespoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped turkey bacon and diced chicken ham; cook until pink is gone.
  3. Add diced onion and minced garlic; sauté until translucent.
  4. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add broken lasagna noodles; cook until tender.
  7. Stir in ricotta cheese and half the mozzarella until melted.
  8. Garnish with fresh basil and the remaining mozzarella before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Add more vegetables like spinach or mushrooms for extra flavor.
