- 1 tablespoon olive oil
- 1 pound turkey bacon, chopped
- 1 pound chicken ham, diced
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 6 cups chicken broth
- 2 tablespoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/4 cup fresh basil, chopped
- In a large pot, heat olive oil over medium heat.
- Add chopped turkey bacon and diced chicken ham; cook until pink is gone.
- Add diced onion and minced garlic; sauté until translucent.
- Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add broken lasagna noodles; cook until tender.
- Stir in ricotta cheese and half the mozzarella until melted.
- Garnish with fresh basil and the remaining mozzarella before serving.
Notes
- This soup can be made ahead of time and tastes even better the next day.
- Add more vegetables like spinach or mushrooms for extra flavor.
