High Protein Broccoli Cheddar Soup

  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy.
  3. Stir in the onion and garlic, sautéing until the onion is translucent.
  4. Add the broccoli and vegetable broth, bringing to a boil.
  5. Reduce heat and simmer until the broccoli is tender.
  6. Using an immersion blender, blend the soup until smooth.
  7. Stir in the cheddar cheese and milk, cooking until melted and heated through.
  8. Season with salt, pepper, and paprika to taste.
