High Protein Chicken Salad

A healthy and delicious chicken salad packed with protein from turkey bacon and fresh greens.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced cucumber
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, crumbled turkey bacon, mixed greens, cherry tomatoes, cucumber, and red onion.
  2. In a separate bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately, or chill in the refrigerator for 30 minutes before serving.

Notes

  • For added crunch, you can include some nuts or seeds.
  • Feel free to substitute any of the vegetables with your favorites.
