  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, cold and diced

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a muffin pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, mix melted butter, eggs, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in diced apples.
  4. In a small bowl, combine brown sugar, flour, and cinnamon for the crumb topping. Add the cold butter and mix until crumbly.
  5. Divide the muffin batter into the prepared pan, and sprinkle the crumb topping over each muffin.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool before serving.

Notes

  • For an extra touch, add chopped nuts to the batter.
