- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup diced apples
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, cold and diced
- Preheat the oven to 350°F (175°C). Grease or line a muffin pan.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, and salt.
- In another bowl, mix melted butter, eggs, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in diced apples.
- In a small bowl, combine brown sugar, flour, and cinnamon for the crumb topping. Add the cold butter and mix until crumbly.
- Divide the muffin batter into the prepared pan, and sprinkle the crumb topping over each muffin.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
