Honey Balsamic Roasted Carrots

Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon fresh thyme, chopped (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix together honey, balsamic vinegar, olive oil, salt, and pepper.
  3. Add the carrots to the bowl and toss until well coated.
  4. Spread the carrots in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
  6. If using thyme, sprinkle it over the carrots during the last 5 minutes of roasting.

Notes

  • For extra flavor, add garlic powder or onion powder to the glaze.
  • Feel free to substitute carrots with other root vegetables like parsnips or sweet potatoes.
