  • 3 carrots sliced
  • 2 potatoes cubed
  • 1 cup green beans chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mushrooms sliced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until softened.
  3. Add carrots, potatoes, and green beans; cook for a few minutes.
  4. Stir in diced tomatoes, vegetable broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce to a simmer and cook for 30 minutes.
  6. Add mushrooms and cook for an additional 10 minutes.
  7. Adjust seasoning if needed and serve hot.
