  • 1 tablespoon olive oil
  • 1 cup diced turkey bacon
  • 1 cup diced chicken ham
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until browned.
  3. Add the chicken ham, onions, bell peppers, and garlic; sauté until vegetables are tender.
  4. Stir in the diced tomatoes, rice, chicken broth, Cajun seasoning, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes or until rice is cooked.
  6. Season with salt and pepper to taste, remove bay leaf, and serve hot.

Notes

  • For extra heat, add some cayenne pepper to taste.
  • This dish can be made with shrimp or sausage for variety.
