Jammy Egg, Avocado & Pesto Toast

A delightful recipe that combines the creaminess of avocado, the richness of a jammy egg, and the freshness of pesto.

Ingredients

  • 2 large eggs
  • 1 ripe avocado
  • 2 tablespoons pesto
  • 2 slices whole grain bread
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a boil and gently add the eggs. Cook for 6-7 minutes for a jammy yolk.
  2. Remove eggs and place them in an ice bath to stop cooking.
  3. Toast the bread to your liking.
  4. While the bread is toasting, mash the avocado in a bowl and season with salt and pepper.
  5. Spread pesto on the toasted bread, followed by the mashed avocado.
  6. Peel the eggs, slice them in half, and place on top of the avocado toast.
  7. Season with additional salt and pepper if desired.

Notes

  • For a spicier kick, add crushed red pepper flakes on top.
  • Use homemade pesto for best results.
