Kimchi-Tofu Soup with Sesame & Egg

Ingredients

  • 1 cup kimchi
  • 1 block firm tofu
  • 4 cups vegetable broth
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 2 green onions
  • 2 cloves garlic
  • 1 egg
  • 1 teaspoon sesame seeds

Instructions

  1. Heat sesame oil in a pot over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Stir in kimchi and cook for a few minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Add tofu and reduce heat to simmer for 10 minutes.
  6. Crack an egg into the soup and let it poach for a few minutes.
  7. Garnish with green onions and sesame seeds before serving.
