Lasagna Soup

A comforting twist on traditional lasagna, this Lasagna Soup combines turkey bacon and chicken ham for a hearty meal.

  • 8 ounces lasagna noodles
  • 6 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 cup chopped onions
  • 3 cloves minced garlic
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the lasagna noodles according to package instructions, drain, and set aside.
  2. In a large pot, cook the turkey bacon over medium heat until crispy, then remove and crumble.
  3. Add olive oil, onions, and garlic to the pot and sauté until softened.
  4. Pour in the chicken broth, crushed tomatoes, tomato paste, Italian seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat, add crumbled bacon, and let simmer for 15 minutes.
  6. Add cooked noodles and stir in ricotta cheese.
  7. Top individual servings with mozzarella and Parmesan cheese before serving.

Notes

  • For added flavor, consider garnishing with fresh basil.
