Lemony Chickpea Soup with Spinach & Potatoes

  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 2 cups fresh spinach
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 tablespoon olive oil
  • juice of 1 lemon

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until softened.
  2. Add the diced potatoes and cook for a few minutes.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add chickpeas, cumin, and coriander; simmer until potatoes are tender.
  5. Stir in fresh spinach and lemon juice just before serving.
