Lemony Chickpea Soup with Spinach & Potatoes

A refreshing and nutritious soup combining chickpeas, spinach, and potatoes with a zesty lemon flavor.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.
  2. Add diced potatoes and cook for 5 minutes.
  3. Pour in vegetable broth, add chickpeas and cumin. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in spinach and lemon juice, and cook for an additional 5 minutes.
  5. Season with salt and pepper before serving.
