Lentil & Rice Vegan Cabbage Rolls

A delightful and easy recipe for vegan cabbage rolls filled with lentils and rice.

Ingredients

  • 1 cup lentils
  • 1 cup rice
  • 1 head cabbage
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • 2 cups tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lentils and rice according to package instructions.
  3. In a pan, sauté onion and garlic until translucent.
  4. Add spices and cooked lentils and rice to the pan, mixing well.
  5. Blanch cabbage leaves and fill each with the lentil-rice mixture.
  6. Place rolls in a baking dish, cover with tomato sauce, and bake for 30 minutes.
