  • 1 cup granulated sugar
  • 1 large egg yolk
  • 2 cups all-purpose flour
  • 1 cup finely ground almonds
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Mix in the egg yolk, vanilla extract, and cinnamon.
  3. Gradually blend in the flour and ground almonds until dough forms.
  4. Divide the dough in half, wrap in plastic, and refrigerate for at least 2 hours.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Roll out each half of the dough to 1/4-inch thickness on a floured surface.
  7. Cut out shapes with cookie cutters and place on the baking sheet.
  8. Cut out a smaller shape in the center of half the cookies.
  9. Bake for 10-12 minutes until lightly browned, and let cool.
  10. Spread raspberry jam on the solid cookies and top with the cut-out cookies.
  11. Dust with powdered sugar before serving.
