- 1 cup granulated sugar
- 1 large egg yolk
- 2 cups all-purpose flour
- 1 cup finely ground almonds
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup raspberry jam
- Powdered sugar for dusting
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Mix in the egg yolk, vanilla extract, and cinnamon.
- Gradually blend in the flour and ground almonds until dough forms.
- Divide the dough in half, wrap in plastic, and refrigerate for at least 2 hours.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll out each half of the dough to 1/4-inch thickness on a floured surface.
- Cut out shapes with cookie cutters and place on the baking sheet.
- Cut out a smaller shape in the center of half the cookies.
- Bake for 10-12 minutes until lightly browned, and let cool.
- Spread raspberry jam on the solid cookies and top with the cut-out cookies.
- Dust with powdered sugar before serving.
