  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or your choice)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the potatoes in salted water until tender, about 15 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add the sour cream, heavy cream, butter, salt, and pepper to the potatoes.
  5. Mash the potatoes until smooth and creamy.
  6. Stir in the shredded cheese until melted and well combined.
  7. Transfer the mixture to a baking dish and bake for 25 minutes or until golden on top.
