Mexican Street Corn Brussels Sprouts

Deliciously roasted Brussels sprouts topped with flavors reminiscent of Mexican street corn, complemented by savory turkey bacon.

  • 1 pound Brussels sprouts
  • 4 slices turkey bacon
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/2 cup mayonnaise
  • 1/4 cup cotija cheese, crumbled
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, juiced
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the Brussels sprouts and cut them in half. Place them on a baking sheet.
  3. Cook the turkey bacon in a skillet until crispy, then chop into pieces.
  4. Add corn, chili powder, smoked paprika, and bacon to the Brussels sprouts. Toss to coat.
  5. Roast in the oven for 20-25 minutes or until the Brussels sprouts are tender and browned.
  6. In a small bowl, mix mayonnaise, lime juice, cotija cheese, and cilantro.
  7. Drizzle the mixture over the Brussels sprouts before serving.

Notes

  • For a spicier version, add more chili powder.
  • You can substitute bacon with a vegetarian option if desired.
