  • 1 cup crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed graham crackers with melted butter and press into the bottom of muffin tins.
  3. In another bowl, beat cream cheese and sugar until smooth.
  4. Add vanilla and eggs, mix until well combined.
  5. Fold in sour cream and pour over graham cracker crusts.
  6. Bake for 18-20 minutes until set, then cool.
  7. Chill in the refrigerator before serving.
