  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix the dry ingredients: flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together the wet ingredients: buttermilk, brewed coffee, oil, egg, and vanilla.
  4. Combine the wet and dry mixtures until just combined, then fold in the chocolate chips.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Let cool completely before frosting.
