Moist Pumpkin Crumb Cake

A delicious and moist pumpkin crumb cake that captures the essence of fall.

  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup crumb topping (see recipe below)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the granulated sugar, brown sugar, pumpkin, oil, eggs, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Pour the batter into the prepared pan and sprinkle the crumb topping on top.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.
