- 2 pounds beef chuck roast
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 tablespoon dried oregano
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 2 bay leaves
- 12 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- In a large pot, heat the vegetable oil over medium heat and add the chopped onion and garlic; cook until softened.
- Add the beef chuck roast and sear on all sides.
- Stir in the beef broth, oregano, cumin, chili powder, and bay leaves; bring to a boil.
- Reduce heat to low, cover, and simmer for 2 to 3 hours until the meat is tender.
- Remove the meat, shred it, and return it to the pot.
- Heat the tortillas on a skillet, fill with the shredded meat, and top with cilantro and a squeeze of lime.
Notes
- For extra flavor, marinate the beef overnight with spices.
- Serve with additional lime wedges and your favorite salsa.
