My Fave Birria Tacos

A delicious recipe for making Birria Tacos that are easy and packed with flavor.

  • 2 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 2 bay leaves
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat the vegetable oil over medium heat and add the chopped onion and garlic; cook until softened.
  2. Add the beef chuck roast and sear on all sides.
  3. Stir in the beef broth, oregano, cumin, chili powder, and bay leaves; bring to a boil.
  4. Reduce heat to low, cover, and simmer for 2 to 3 hours until the meat is tender.
  5. Remove the meat, shred it, and return it to the pot.
  6. Heat the tortillas on a skillet, fill with the shredded meat, and top with cilantro and a squeeze of lime.

Notes

  • For extra flavor, marinate the beef overnight with spices.
  • Serve with additional lime wedges and your favorite salsa.
