No-Bake Raspberry Cheesecake

A delightful no-bake raspberry cheesecake that is easy to prepare and perfect for any occasion.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 ½ cups fresh raspberries

Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth, then add powdered sugar and vanilla extract, mixing well.
  3. In a separate bowl, whip heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
  4. Gently fold in fresh raspberries, then pour the mixture over the crust in the springform pan.
  5. Chill in the refrigerator for at least 4 hours or overnight before serving.

Notes

  • For a bolder raspberry flavor, add raspberry puree to the filling.
  • Top with additional fresh raspberries before serving for decoration.
