  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla.
  4. In another bowl, combine the rolled oats, flour, baking soda, salt, and cinnamon.
  5. Gradually stir the dry ingredients into the creamed mixture. Fold in the raisins.
  6. Drop by spoonfuls onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until golden brown. Allow to cool on a wire rack.

Notes

  • For chewier cookies, add a bit more brown sugar.
  • Feel free to add nuts for extra crunch.
