Old Fashioned Beef Stew

A warm and hearty dish perfect for any occasion, featuring diced beef and a hint of turkey bacon.

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1/2 pound turkey bacon, chopped
  • 4 cups beef broth
  • 3 large carrots, sliced
  • 3 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the turkey bacon and cook until crispy, then remove and set aside.
  3. In the same pot, brown the beef in batches, then remove and set aside.
  4. Add onions and garlic, cooking until softened.
  5. Stir in the beef, turkey bacon, broth, carrots, potatoes, tomato paste, thyme, salt, pepper, and Worcestershire sauce.
  6. Bring to a boil, then reduce heat to low and simmer for about 2 hours, until the beef is tender.

Notes

  • For a thicker stew, mix 2 tablespoons of flour with water and stir into the pot during the last 30 minutes of cooking.
  • This stew can be made a day in advance for improved flavors.
