- 4 pieces chicken thighs
- 1 cup long grain rice
- 2 cups chicken broth
- 1 cup cherry tomatoes
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
- Heat olive oil in a large pan over medium heat.
- Season chicken thighs with salt, pepper, and oregano, then sear in the pan until golden on both sides.
- Add onion and garlic and sauté until softened.
- Stir in the rice, followed by chicken broth, bell pepper, and cherry tomatoes. Bring to a boil.
- Cover and reduce to a simmer for 20-25 minutes until rice is cooked.
- Remove from heat and let it sit covered for another 5 minutes. Garnish with parsley before serving.
Notes
- Feel free to add other vegetables like zucchini or spinach for extra nutrition.
