One Pan Mediterranean Chicken and Ric

Delight in the flavors of the Mediterranean with this simple, one-pan chicken and rice recipe.

  • 4 pieces chicken thighs
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 cup cherry tomatoes
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Season chicken thighs with salt, pepper, and oregano, then sear in the pan until golden on both sides.
  3. Add onion and garlic and sauté until softened.
  4. Stir in the rice, followed by chicken broth, bell pepper, and cherry tomatoes. Bring to a boil.
  5. Cover and reduce to a simmer for 20-25 minutes until rice is cooked.
  6. Remove from heat and let it sit covered for another 5 minutes. Garnish with parsley before serving.

Notes

  • Feel free to add other vegetables like zucchini or spinach for extra nutrition.
  • This dish can be made in advance and reheated for a quick meal.
