  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup jelly or jam of choice
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine cottage cheese, peanut butter, honey, eggs, and vanilla extract.
  3. In another bowl, mix flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill each muffin cup halfway with the batter, then add a teaspoon of jelly or jam on top of the batter.
  6. Cover the jam with the remaining batter until the cups are about three-quarters full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
