Peanut Butter Noodles

  • 8 ounces spaghetti or rice noodles
  • 4 slices turkey bacon
  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped green onions
  • 2 tablespoons chopped peanuts (optional)

Instructions

  1. Cook the spaghetti or rice noodles according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove from heat and chop into pieces.
  3. In a bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, honey, garlic, and red pepper flakes until smooth.
  4. Add the cooked noodles to the skillet with bacon and pour the peanut sauce over the noodles. Toss to coat well.
  5. Serve garnished with green onions and chopped peanuts if desired.

Notes

  • For a vegetarian option, skip the turkey bacon and add more vegetables.
  • Add more or less red pepper flakes based on your heat preference.
