A delicious and nutritious protein-packed butternut squash soup made with savory turkey bacon.

Ingredients

  • 1 medium butternut squash
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 cup coconut milk

Instructions

  1. Preheat a large pot over medium heat. Cook the turkey bacon until crispy, then remove and set aside.
  2. Add the onion and garlic to the pot and sauté until softened.
  3. Peel and cube the butternut squash, then add it to the pot with the broth. Bring to a boil and then simmer until the squash is tender.
  4. Blend the soup until smooth, then stir in the coconut milk and seasonings.
  5. Serve topped with crumbled turkey bacon.

Notes

  • For extra flavor, add a dash of nutmeg.
  • This soup can be made ahead of time and reheated.
