  • 2 eggs

  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together pumpkin puree, sugar, brown sugar, and softened butter until smooth.
  3. Add eggs and vanilla extract, and mix until well combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop the batter into muffin liners, filling them about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool and enjoy!

Notes

  • For extra flavor, add a cream cheese frosting on top.
  • These muffins can be made ahead and frozen.
