- 1 1/2 cups all-purpose flour
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup rolled oats
- 1/4 cup chopped nuts (optional)
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, blend the pumpkin, eggs, oil, and vanilla.
- Combine wet and dry ingredients until just mixed, then fold in oats and nuts.
- Spoon batter into muffin tin, filling each cup about 2/3 full.
- For the streusel topping, mix additional oats, brown sugar, and butter until crumbly, then sprinkle on top of each muffin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
