Pumpkin Streusel Muffins

Delicious pumpkin muffins topped with a crunchy streusel, perfect for fall.

  • 1 1/2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup rolled oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, blend the pumpkin, eggs, oil, and vanilla.
  4. Combine wet and dry ingredients until just mixed, then fold in oats and nuts.
  5. Spoon batter into muffin tin, filling each cup about 2/3 full.
  6. For the streusel topping, mix additional oats, brown sugar, and butter until crumbly, then sprinkle on top of each muffin.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For an extra flavor boost, add chocolate chips.
  • These muffins can be frozen for later enjoyment.
