Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar.
  3. Add the pumpkin puree, eggs, and vanilla extract. Mix until well combined.
  4. In another bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the white chocolate chips.
  7. Drop tablespoon-sized balls of dough onto a baking sheet.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
