  • 1 cup raspberries
  • 1/2 cup white chocolate chips
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix the cottage cheese, sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, combine the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Fold in the raspberries and white chocolate chips.
  6. Fill the muffin tins about 2/3 full with the batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack.
