  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 ½ cups fresh raspberries
  • ¼ cup raspberry puree

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a mixing bowl, blend cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in fresh raspberries and raspberry puree.
  6. Pour the cheesecake mixture over the crust.
  7. Bake for 50-60 minutes or until set. Let cool.
  8. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a firmer cheesecake, refrigerate overnight.
  • Top with additional raspberries before serving for a beautiful presentation.
