- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 ½ cups fresh raspberries
- ¼ cup raspberry puree
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a mixing bowl, blend cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Fold in fresh raspberries and raspberry puree.
- Pour the cheesecake mixture over the crust.
- Bake for 50-60 minutes or until set. Let cool.
- Chill in the refrigerator for at least 4 hours before serving.
